Meet The Chef

We chat to chef Nana about the comfort food revival.

Nowadays, people are looking for simple comfort food over a fine-dining experience. That’s according to ShukuriddinSekh (alias Nana), chef of Royal Restaurant in Ajmer, who says guests are seeking out richer, home-style dishes over high-end menus in a formal setting.

Chef Nana brings with him over 22 years of technical and management experience in F&B. He has served at various properties all over India including Chennai, Mumbai, Bengal and Ajmer.

He says guests are seeking out a more relaxed atmosphere during their travel. Wistfully describing street food around India, he says his favourite way to experience the country is through its cuisine – from Hyderabadi biryanis to South ravadosas. “I want to enjoy food, but I think I’d rather be eating on the streets, rather than sitting in a suit in a fine-dining restaurant.”

While explaining his menu that covers Indian and International dishes, he says it’s not about one specific cuisine or fitting dishes into a particular style. He explains, “Some chefs will say, ‘I only want to do North Indian food’; but for me, I just want to do good food.”
